Ingredients
  

  • 1 cup cottage cheese low-fat or full-fat
  • 2 large eggs
  • 2 tbsp almond flour optional
  • ½ tsp baking powder
  • Pinch of salt
  • Optional: garlic powder Italian seasoning, chili flakes

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Blend cottage cheese, eggs, almond flour (if using), baking powder, salt, and seasonings until smooth.
  • Let the batter rest for 5–10 minutes to thicken slightly.
  • Spoon batter onto the baking sheet into 4–5 circles, about 5–6 inches in diameter.
  • Smooth the tops with a spoon or spatula.
  • Bake for 18–22 minutes until golden around the edges and set in the center.
  • Cool for 5 minutes before peeling off the paper. Serve warm or store in the fridge.
